This chapter provides an overview of current cultured meat technology. It starts by first discussing the limitations of conventional food systems, focusing on the environmental, social and economic impacts these systems can have. The chapter moves on to provide a rationale for a transition to cellular agriculture, specifically addressing the health, sustainability and economic benefits cellular agriculture could have. A section on advances in cellular agriculture is also included, which is followed by an overview of current challenges for the cellular agriculture field.
