Chapter synopsis: Meat processing presents a particular challenge to robotics, as it deals with deformable biological products that lack uniformity: no two fish, sides of beef or chicken carcasses are exactly alike. Meat processing plants have many adept human practitioners, skilled with knives, and has proven extremely difficult to automate with robots. This chapter selectively surveys the advances in robotic automation of the processing of fish, beef, pork and lamb, as well as poultry, providing a detailed case study of the latter based on the author’s own research. The chapter looks ahead to future trends in this area and provides detailed guidance on further reading in the field.
