The role of beef in human nutrition and health

Chapter synopsis: Beef is an important source of both macronutrients and micronutrients. Nevertheless, concerns have been raised regarding the effects of eating red and processed meat on human health. In this chapter, we review the nutrients available in beef and then assess the concerns raised about the health impacts of consuming red meat, particularly the suggested association between intake of red meat and the risk of cancers.
