Chapter synopsis: This chapter reviews the three main beef carcass grading or classification systems used across three continents. These are used for a large proportion of beef production and processing in the world. One is the ‘EUROP’ system for EU countries, another is the USDA Beef Carcass Grading system in the United States and the third is the Meat Standards Australia system in Australia. The chapter also discusses grading in Japan.
