Chapter synopsis: Fruits and vegetables significantly benefit human health as they contain a large number of phytochemical compounds. Several strategies can be applied to effectively improve these health-promoting compounds by manipulating various agronomic factors. This chapter aims to provide a comprehensive understanding of how widely reported environmental factors (e.g., lighting, temperature, relative humidity, and carbon dioxide) and agronomic practices (e.g., cultivar selection, fertilizer, phytohormones, abiotic stress, and harvest time) affect the accumulation of phytochemicals in vegetables and fruits.
